It is a raw product with a very light curing process. You can find two presentations, the mini chorizo of about 30-40 grams ideal for tapas and chopped and the normal chorizo of about 50-60 grams. Both products are manufactured by our butchers and we sell them by fresh and vacuum strings. It is made up of lean and pork belly, different types of spices and sausage in natural pig gut. In the case of this product, once it has been finished and stuffed, it will be necessary to rest for 6-8 days in a chamber at 14º and 80% humidity.
